MINTY LAMB COBBLER
We’ve made this tasty dish many times here at Cabyn HQ. It’s a winner if you need to feed a larger group, and the kids love cutting the dumplings! The recipe is from Booths, the ‘Waitrose of the North’, a high-end supermarket based in the North of England, selling quality produce and owned by the Booth family and its staff.
It takes a little time but it’s not too tricky and perfect for a lazy Sunday. We serve it up with whatever veg we fancy on the day, on this occasion some simple peas, tenderstem and roasted sweet potato were the perfect accompaniment. Goes well with a nice beer or a glass of red and would be a great meal to serve up this Easter! Nom nom.
