Rather Good Rocky Road

Make this with the kids as an end-of-homeschooling treat! Whether you’re at the stage of needing a pick-me-up, or you are ready to celebrate, then this easy recipe is a little bit of well-earned indulgence.

It’s so very simple and you can use any fun ingredients that you like. You basically need a 50/50 balance of melted chocolate to your other ingredients. Here we have used mostly dark chocolate for richness, with a little milk chocolate, and white chocolate for decoration.

Makes 20 pieces. 30 mins to prep + cooling

400g quality dark chocolate

50g quality milk chocolate

50g white chocolate

500g mix of the fun stuff such as marshmallows, popcorn, dried fruit (we used a bit of stem ginger in syrup), dessicated coconut, mixed unsalted nuts

  1. Melt the dark chocolate in a heatproof bowl over a pan of gently simmering water, stiring gently until it’s smooth and glossy
  2. Take off the heat and fold in your fun mix
  3. Line a baking tray with greasproof paper, then pour in your mixture and spread it out across the tin evenly
  4. Melt the white chocolate and milk chocolate in the same way as above, in separate bowls and when melted drizzle over the rocky road. Have fun!
  5. Leave to cool and set for a few hours, then slice up and devour!
